Rocky Mtn Eats, Thanks Roy

Thanks to Roy of Contemplative Fitness for recommending a Colorado establishment for dinner.

Roy hails from Colorado and suggested a pizza place unique to his home; Beau Jo’s which was featured on Man vs Food.

After a long day in the Rocky Mountains we went to their Boulder location for dinner. There you see our Colorado original Mountain Pie. Being meat eaters, we went with the “Motherlode”, a delightful pie of pepperoni, meatballs, Italian sausage, salami, ham and mozzarella cheese.

Roy, it was absolutely delicious!

Now I had two slices of our 3-pound pie, but could’ve eaten two more. I had a small salad from the salad bar to fill some of the void while we waited for our pie to arrive.

Earlier in the day as we drove I snacked ok an apple, a bag of mixed nuts and one piece of beef jerky.

So similar to yesterday, I did well to keep the quantity of food intake in check while the quality can be questioned.

    I would have so eaten that pizza and said I was doing Dr. Atkins! Good for you for showing such restraint and only eating two slices and even having a salad. You are a strong man.
